CAULIFLOWER

A member of the brassica family, it is related to broccoli, kale, brussels sprouts and cabbage. White cauliflower’s lack of color comes from the heavy green leaves protecting the head from sunlight, which prevents chlorophyll from developing. Cauliflower is a good source of vitamins C & K, and the curd along with the stem and leaves are edible.
