FRISEE

Frisee is French for “curly,” and as its name suggests, it’s a curly type of chicory. Recently, it has exploded onto gourmet plates and adds a bitter, woodsy taste to green salads. It has a strong, distinctive flavor and a small amount goes a long way. When using frisee, tear it rather than using a knife. Like other greens, it should be washed before consumption. The inner leaves are the tenderest and should be used more abundantly than the tougher outer leaves. Use shortly after purchasing because frisee discolors rather quickly. It can be stored for 4-5 days in a ventilated bag in the refrigerator. With only 18 calories and loaded with vitamins A, B, C and E, introduce your guests to this exotic ingredient that adds a layer of complexity to any salad.
