PERSIAN CUCUMBERS

There’s a reason for the old expression, “as cool as a cucumber.” They have an amazing capacity to retain water and remain cool, sometimes up to twenty degrees cooler than their exterior. Persian cucumbers, similar to the common green-skinned cucumber, often measure four to five inches in length. They have practically no fat, are low in calories and offer a bit of fiber. It is recommended that you peel most field grown cucumbers before serving, because many cucumbers are waxed to retain moisture for markets. Persian cucumbers typically are not waxed. Offering a sweet flavor, cucumbers are one of the most versatile fruits (although often thought of as a vegetable). They make an excellent addition to salads, sandwiches, soups, yogurts, and relishes. To store, refrigerate in the crisper drawer.
