LONG SQUASH

Long squash is, predictably, a long narrow variety of squash and is similar to zucchini in flavor. Long squash is predicted to be of African origin, but it is found throughout Europe and Asia and goes by a variety of names throughout the world. Grown most often in warmer climates, this squash can reach 3 feet in length and 1 foot in diameter. The outer skin can range in color from yellow to green while the inner flesh, which contains seeds, is white and firm textured. The squash’s mild flavor, becomes increasingly bitter as it matures. Its uses in cooking vary, but it is a common ingredient in stir-fry, soup and stew.
