Description

The cardoon is a thistle-like plant with an artichoke, salsify and celery flavor. It grows from 31 to 59 inches tall with green leaves up to 20 inches long. It is used mostly by French and Italian chefs. Enjoy it fried, sliced or in soup. This vegetable is an excellent source of potassium.
