CIPPOLINE

Cippoline are small, flat, sweet onions said to have originated in Italy and are very well suited to pickeling, roasting or sauteeing whole. The Cippoline are produced in several colors, but most are pale yellow. Pronounced chi-poh-LEE-nee, the skins are papery and thin and the flesh is slightly yellow and sweeter than garden-variety white or yellow onions. The Cippoline’s size makes them a natural in recipes that call for whole caramelized onions. With only 7 calories per onion, they’re a guilt-free addition to any recipe!
