Heart of Palm is the edible inner portion of the stem (or heart) of certain varieties of wild palm trees. Soft, sweet and ivory-colored, the heart of palm has a mild flavor and a bit of a crispy texture. Some have compared its taste to that of an artichoke. Heart of palm enjoys a loyal following in many areas with year round palm tree production. The harvesting process results in destruction of the tree, therefore production is limited. Hearts of palm have no cholesterol, are high in fiber and low in calories.
