For one thing, they have smaller and fewer seeds which makes them less bitter tasting. Cello cucumbers are are sold wrapped in plastic to reduce respiration and thereby moisture loss. They are not waxed and consequently don’t need to be peeled. Also, the English cucumber is more easily digested than many other varieties. When selecting a cucumber, make sure that it is firm to the touch and contains no blemishes or soft spots. The skin should be a dark green with no light colored streaks. Keep cucumbers unwashed in a plastic bag in your refrigerator’s crisper. Use in vegetable dishes, salads, sauces, cold soups or as a snack with dips.
