JERUSALEM ARTICHOKE

Ironically, Jerusalem artichokes aren’t artichokes at all and don’t come from Jerusalem. They are actually the “tuber” of a perennial flower in the aster family and are a variety of sunflower. This gnarly root is frequently marketed under the name sunchoke. Jerusalem artichokes have a delicate taste that resembles a water chestnut. Their potato-like texture is the perfect potato substitute for diabetics.
