MICROGREENS

Everyone is raving about MicroGreens. Considered to be a member of a group of “functional foods” that contain health promoting and disease preventing properties, MicroGreens are tiny plants – usually no more than 8 to 14 days old. The varieties grown for this group are very often colorful and include beet tops, tatsoi, cabbages, kohlrabi, and many, many more. They have been found to contain higher levels of concentrated active compounds than are found in mature plants or seeds. Therefore they pack a powerful punch of flavor and nutrition; microgreens are delicious and born to enhance salads, soups or main entrees. Only the stem and baby leaves are consumed.
