RADICCHIO ROSSO DI TREVISO PRECOCE IGP

Radicchio Rosso di Treviso Precoce IGP is a member of the chicory family, and only radicchio grown in the Region of Venice, Italy may be labeled with this name. “IGP” is a designation protected by European Union law, and is applied to this variety of radicchio that is exported from a hand full of communities in and around the province of Treviso, Italy. The best quality of “Precoce” is produced there because of the climate and ample supply of fresh spring water. Products labeled with the “IGP” designation are guaranteed to be genuine and produced in the area best suited for production of the item. The head of “Precoce” is elongated, like romaine lettuce, with a wide white rib and dark red or crimson, ruffled leaves. The taste is intriguingly bitter, which is common to many varieties of chicory. The heads should be solid, not fluffy and the product lends itself well to grilling, as a filling for pasta or in salads.
