Sun-dried tomatoes were originally created as a way to store fresh tomatoes for the winter in Italy. Drying the tomatoes preserved the vitamins and antioxidants that fresh tomatoes provided to be enjoyed in winter when fresh tomatoes were unavailable. The drying process is used to remove the water content of fresh tomatoes, traditionally from plum tomatoes but also available in other varieties. This removal of water means it requires twenty pound of fresh tomatoes to get just one pound of dried product!
